Being the staple feed of Filipinos, rice is cooked assorted ways and Arroz Valenciana is just one of the most favored because you don’t have to think of any other dishes to pair it with. It is rice and mixed meats mold into one dish. It is a special rice recipe normally served for the duration of fiestas.
Ingredients:
- 1 young chicken (cut into regular pieces)
- 1/2 kilo pork (cut into regular pieces)
- 2 pcs Chorizo de Bilbao (sliced)
- 6 potatoes (quartered)
- 1/2 cup shortening
- 2 segments garlic (macerated)
- 1 onion (sliced)
- 1 cup tomatoes
- 1 cup sweet peas
- 1/4 cup olives
- 3 cups rice (boiled in 2 cups coconut milk and 3 cups water)
- 1 tsp salt
- Slices of hard-boiled eggs
- Slices of sweet red pepper
- Salt, pepper and paprika (to taste)
Cooking Instructions:
- Season chicken and pork meat with salt and pepper. Fry until color is somewhat brown.
- In a deep pan, saute the garlic, onions and tomatoes. Then add the potatoes, chicken, pork, and chorizos. Mix well then cover the pan and grant to cook until the potatoes and meat are tender. Add water if needed.
- Add the sweet pepper, sweet peas and olives. Take out a great deal of of the stock from the pan and set isolated when the vegetables and meat are done.
- Add the cooked rice to the meat mixture and mix exhaustively with a wooden spoon until well blended. Add the remaining stock and seasoning to taste. Cook on low heat until the mixture becomes rather dry.
- Garnish top with sliced hard-boiled eggs, stuffed olives and red pepper slices.

Excellent Paella Pan for 12! By The Happy Gourmet For his 16th birthday, my son asked me if we could serve paella at his birthday party to his friends. I said yes, except for one thing, the list of guests between friends and family went up to about 24 people, and I only have a paella pan which only serves 10. One paella pan was not going to do the job for this birthday dinner. So I scramble online in search of an additional pan to be able to make enough paella for everyone. This new paella pan I bought is much better that the one I’ve had for years, and it did the job wonderfully. The paella cooked well and displayed beautifully. The pan size is just perfect to serve 12 people or more, you can cook about 4 to 5 cups of rice easily, along with all your vegetables, party size chicken drumsticks, pork, shrimp and mussels. It all fits great! Everyone enjoyed dinner and I was a happy camper. I highly recommend this product. Have fun making your paella and enjoy your new paella pan if you decide to buy it.

Paella Perfect By K. Lu The 18.5″ paella pan fit perfectly on my 22″ Weber BBQ charcoal grill. Making it outdoors on the grill provided as much entertainment for my guests as it made good paella. Also kudos to Amazon for the fast delivery, ordered on Monday arrived here in Hawaii on Thursday.

Great Big Paella Pan! By J. TEETERS I love this paella pan. It’s got plenty of room and handles heat evenly. Very sturdy on the stove top and even fits in the oven. Keep in mind it’s 18.5 inches. My first thought was that I could fit a hippo in it! If you would like a smaller pan, they are out there, but since I am cooking for a crowd or for the week, I love the larger size.
