What is the difference between a Cast Iron pot and an iron smelter Dutch?

Continuing our theme about a tiny little Dutch fishing village called Volendam I asked an old friend Hans from the Hollandse Markt in the center of Volendam to write me a little article about Poffertjes – AKA Dutch Pancakes. You might be hesitant to have a go at pronouncing Poffertjes but give it a go as it sounds pretty much as it looks and not that I am fluent in Dutch but my advice would be to put a slight emphasis on the “T”. So PofferT jes. Give it a go no one can hear you on the net.
I have been visiting the village of Vollendam for 23 years now and remember fondly getting my photo taken in Dutch costume with my groups. We are here today though to talk about Poffertjes. The village itself is just beautiful and I like to take a walk around the harbor and perhaps get some Pommels with mayo for the walk. MAYO! I believe I just said you can’t hear anyone on the net. That is except the collective Mayo, I just heard. Perhaps it’s for another day but if you have never had mayo on your fries give it a try just once in place of ketchup. Once you have had mayo baby you anoint going back.
Anyway I have been trying to get to Poffertjes. The last thing I do in Volendam is go to the Hollandse Markt to see Hans and have my fix of these tiny little treats. There are few places I have ever seen which still do them and believe me they are great. Only problem for me the tour director is we always leave 5 – 10 minutes late from Volendam because there are always a few of my people who wait to the last minute like I do.
Anyway here is the article Hans wrote. Please stop in and see him when you visit Volendam and please mention Michael from Affordable. There is nothing in it for me except a steady and ongoing supply of Poffertjes every time I am in one of my favorite places in Holland.
The “Hollandse Markt”is specialized in several things, among which:
1. Poffertjes.
Tiny puff-pancakes. This kind of pancakes is typical Dutch. It exists already since the year 1700 (according to a painting, made in those days). The recipe we use is from my grandmother. When we started in 1980, she was 80 years old. She believed in doing classical things for visitors and she was right.
2. Lace.
Lace curtains and table clothes.
3. Wooden wedding Shoes.
In the older days, when a fisherman wanted to marry his fiancée, he took a pair of plain clogs with him when he went fishing for a week, two weeks, a month or even longer. He carved figures in them and when he came back, he placed the clogs in front of her house. This was the same as: “I want to marry you” .
When you are in Holland, you must come to Volendam (20 kilometers above Amsterdam) and visit our shop Hollandse Markt. The address is Haven 28 in Volendam (opposite the famous hotel Spaander). The shop itself is in the old indoor car park of the hotel. The license plates are still on the ceiling. Some of them are over 80 years old. What is a really good skillet or Pots and Pans Set?
I am looking to buy a nice pan for my mother for her birthday. I've been How she really looking for a 12 inch Anodized Skillet kitchen that is too safe and guaranteed for life. I wondered if it was a good idea or not. I have purchased many different pans for her and every time you start to stick. Any advice is welcome. Thank you. I'll be sure to choose the best answer!

Duck Breast with Cherry Chutney
Ingredients
1 tablespoon extra-virgin olive oil
½ cup chopped onion (1 small)
3 garlic cloves, crushed
1 tablespoon finely chopped shallot
½ teaspoon black pepper
½ teaspoon ground cumin
Scant ¼ teaspoon dried hot red pepper flakes
¾ teaspoon salt
½ cup coarsely chopped red bell pepper (½ medium)
1 plum tomato, coarsely chopped
¼ cup dry red wine
1 ½ to 2 tablespoons cider vinegar
2 tablespoons sugar
½ teaspoon Dijon mustard
1 can (3 cups) Bing cherries, quartered *Oregon brand
½ cup Golden Raisins
10 (6 oz.) boneless duck breasts with skin
2 tablespoons water
1 tablespoon chopped fresh tarragon or chives
Method for chutney and glaze:
Heat oil in a 2 to 3 quart heavy saucepan over moderate heat until hot but not smoking, then cook onion, garlic, and shallot, stirring occasionally, until golden, about 7 minutes. Add tomato paste, black pepper, cumin, hot pepper flakes, and 1/4 teaspoon salt and cook, stirring, 30 seconds. Reduce heat to medium and add bell pepper and cook, stirring occasionally, until softened, about 5 minutes. Stir in wine, vinegar (to taste), and sugar and simmer approx 5 minutes. Stir in mustard, 1 1/2 cups cherries, and remaining 1/2 teaspoon salt and simmer 1 minute. Allow to cool slightly and reserve all but ¼ cup of the mix to the side. Place1/4 cup mix in a blender and puree until very smooth, about 1 minute (use caution when blending hot liquids). Reserve for glazing duck. To finish the chutney, add the remaining 1 ½ cups of cherries, tarragon, chives and all the golden raisins. Can be prepared one day ahead.
Put oven rack in middle position and preheat oven to 450°F. Score duck skin in a crosshatch pattern with a small sharp knife and season duck all over with salt and pepper.
Heat water in an ovenproof 12-inch heavy skillet over low heat until hot, then add duck, skin side down. Cook duck, uncovered, over low heat, without turning, until most of fat is rendered(melted) and skin is golden brown, about 25 minutes.
Transfer duck to a plate and discard all but 1 tablespoon fat from skillet. Brush duck all over with cherry glaze and return to skillet, skin side up.
Roast duck in oven until thermometer registers 135°F, about 8 minutes for medium-rare. Remove from oven and allow to rest for 5 minutes.
Holding a sharp knife at a 45-degree angle, cut duck into slices. Serve with cherry chutney and molasses whipped sweet potato.
