Very well written and informative. FIVE STARS !!! By Robert C. Sauerkraut, Kimchi, Pickles and Relishes is a practical book about making fermented vegetables. The fermentation process is explained so clearly that there is no excuse for not making top quality products at home every time. A great deal of information is dedicated to the equipment that is needed for making those products at home. The discussion covers factory made fermenting crocks as well as the containers that can be made at a fraction of the cost easily at home, yet they will perform as well as the best commercial equipment. This thorough discussion is backed with detailed drawings, plans and photographs. I am quite handy with tools and have made six one gallon containers according to the plans. Well, they work beautifully, and because the design incorporates a wine fermenting air lock, they can be utilized for making wine as well. There are recipes to get me started, but it seems that I will be creating my own fermenting masterpieces. I strongly recommend this book to anybody who wants to understand what making fermented vegetables is about.

Fun sides By Sheila Raj I have been tempted to try making sauerkraut as Summer is getting closer, and I wanted to add an authentic touch to my backyard BBQs. Reading my copy of ‘Sauerkraut, Kimchi, Pickles & Relishes’ has made me less anxious about the pickling process. The book does an excellent job of illustrating the methods and instruments needed to make sauerkraut. It also details making popular Asian sides like tsukemono and kimchi. The fermentation process makes the end product full of probiotics, a plus if you are concerned about your digestive health. I expect to make many of my own combinations of sides, using this book as a guide. I recommend this to anyone who wants to add an interesting, healthy side to their dishes.

Over-priced! By Boyd Schidtt The information is fine, but there isn’t anything in this tiny incredibly over-priced volume of just 78 pages that can’t be found easily on the internet.
