About the Brand

Pamela Giusto-Sorrells’ grandfather, Matthew, in front of the Golden Crescent, circa 1941.

In 1941, Pamela Giusto-Sorrells’ grandparents owned one of the initial health feed stores in San Francisco, the Golden Crescent. It was a little neighborhood natural feed bakery and store supplying “brick-like” rice, soy, and potato/lima bean breads, as well as rice and soy cookies. These were some of the introductory available gluten-free foods. In her youth, she had one of the few “female” jobs in the bakery as a cookie packer. Even as a child, and then as a bakery employee, “I was continually astonished that consecrated clients were so thankful to find our gluten-free foods. I personally thought these productions looked and tasted astounding and wondered why humans ate them. The typical reply was, ‘Let them be happy there is something on the market for them to eat,’” she says.

Always the dessert baker at home, and after all those hours on the cookie line in the family business, she started experimenting with wheat-free baking. The challenge was to make merchandise that tasted so good that no one would be competent to tell that they were wheat-free. “My career was born,” she says. “In 1988, I left the family business taking one little pallet of my belongings with my basi forklift and moved two blocks away.” On April Fool’s Day, Pamela’s Products became an independent business featuring wheat-free and gluten-free foods, each bite prompting the incredulous feed lover to ask: “Are you sure these are wheat-free?”

Pamela’s, based in Ukiah, Calif., proceeds to maintain it is indulgent reputation by using the finest natural ingredients, and always endeavoring to delight the client with delicious, decadent wheat-free and gluten-free cookies, biscotti, and baking mixes. Its productions may be found all around North America.

Why Wheat-Free & Gluten-Free?
People who have a wheat allergy or gluten sensitivity suffer a range of physical sensations or changes (for example: abdominal bloating, diarrhea, gas and low energy) as a result of eating sure grains. Gluten Intolerance, also known as Celiac Sprue, irritates the intestinal lining preventing the absorption of nutrients into the body through the little intestine. Gluten is a protein found in wheat, rye, barley, perchance oats, and other grains.

5Great bread…even better pizza crust!
By B. Wilkinson
We’ve been using this bread mix for about a year, as it’s the best gluten-free bread mix I’ve found. I usually make the sweet bread and it’s very good, although it would make a great savory bread with herbs as well. I didn’t even think to try to make pizza crust with it, as we were using a mix specifically for pizza crust from another popular gluten-free brand, which I didn’t really like (too light and thick like a deep dish, but without flavor). I just tried Pamela’s bread mix for pizza crust and it was amazing. Not too thick and a bit chewy just like “real” pizza crust. I did add the italian spices which are optional but suggested in the directions, and it was wonderful. The first decent pizza we’ve had since we’ve been gluten-free!

3Good texture, flat flavor
By Maneki Neko
I had high hopes for this gluten-free bread mix, and although it had many good qualities, I probably wouldn’t buy it again because I didn’t care for the flavor. I made it in my breadmaker and it rose nicely and held its shape reasonably well after I took it out of the machine. I let the bread cool before I cut it as all gluten free bread can fall if cut while hot, and the bread sliced very well. Each individual slice had a spongy, soft bread texture. Actually it was almost a little TOO soft for me, but those who like soft bread might enjoy it. I cut a slice and put margarine and honey on it, expecting to have a tasty bite of fresh bread- but something about the flavor bothered me, and I had difficulty enjoying it. I have had almost every kind of gluten-free bread on the market and have been gluten free for a long time, but I don’t know how I feel about this new Sorghum craze. Although it yields decent nutritional value and good texture, similarly to bean flour, if there is too high of a ratio of sorghum to neutral flours (White rice, tapioca, etc.) I think that the flavor is negatively impacted. I prefer a more subtle mix, like Bette Hagman’s four flour blend, which has less sorghum and thus gets the good qualities of the flour without negatively impacting flavor. I toasted the bread for sandwiches for a few days and my husband ate it without complaint (he is not gluten-free), but because I didn’t like the bread and it reminded me a little of playdough, I don’t think I’ll buy it again. My entirely subjective opinion aside, if you are looking for an easy gluten-free bread mix for your machine, I would recommend that you try this mix, because only trial and error will help you find a bread mix that suits your palate. I prefer homemade bean flour blends, Bob’s red Mill GF bread, or The gluten free Pantry’s favorite sandwich bread, but you may find this mix fits the bill perfectly!

One other note- Most of the 99 reviews listed for this item are actually NOT for this specific mix- they are for the full spectrum of Pamela’s products on Amazon. So, while people like this mix- 99+ people have not (yet) rated this item.

5It does make an AMAZING bread !!!
By ArikMom
This past December my 7-year old son was diagnosed with allergic to wheat. This is a little guy that LOVES bread !!! He is also allergic to dairy. So, I searched and tried many kinds of wheat free bread mix/recipes and he might eat 2 bites and then stopped with sad face or he would cry. He said “it’s yucky, grainy, tasted bad…”. I often hid my tears, ’cause I knew I needed to be strong for him. Once I even ordered a bread from a bakery chef, $6.50/loaf, and my son took one bite and that’s it!

Then in June I checked out Amazon, and found this product. The review said it’s moist and not grainy, and I was so desperate, so I ordered a box of 6! That ended my search!!

When I put the 1st loaf on the dining table, my son could not stop eating it (and of course, I cried secretly in the kitchen!). I also ordered the cake mix, and chocolate chip cookies mix. I can’t express how thankful I am to see my son’s bright eyes as he enjoys his bread. By the way, I like it too. Thank you to the people that make Pamela’s Products !!!!
